Purée the mango: Blend the mango chunks with the lime juice until completely smooth. 2. Mix the base: In a large bowl, whisk together the mango purée, kefir, and sweetened condensed milk until uniform. 3. Whip the cream: In a separate chilled bowl, whip the heavy cream until stiff peaks form. 4. Fold gently: Lightly fold the whipped cream into the mango-kefir mixture in three batches using a spatula. Keep it airy. 5. Freeze: Pour the mixture into a 9x5-inch loaf pan. Cover with plastic wrap, pressing it directly onto the surface to prevent ice crystals. Freeze for at least 6 hours. INGREDIENTS For the tortilla cones 🫘 4 soft 8-inch flour tortillas 🫘 Olive oil spray 🫘 8 toothpicks For the cheesy bean filling 🫘 1 teaspoon olive oil 🫘 ½ small red onion, finely diced 🫘 1 small red bell pepper, finely diced 🫘 1 tablespoon mild taco seasoning 🫘 1 tablespoon tomato paste 🫘 1 x 15-ounce can black beans, drained and rinsed 🫘 ½ cup corn 🫘 ¼ cup water 🫘 ¾ cup grated cheddar cheese, divided 🫘 Salt and black pepper, to taste RECIPE Make the cones: 1. Preheat the oven to 375°F / 190°C and line a tray with parchment paper. 2. Warm the tortillas for 15–20 seconds, then cut each one in half. 3. Roll each half into a cone, secure with a toothpick and lightly spray with olive oil. 4. Bake for 7–9 minutes, until crisp, then remove the toothpicks. Make the filling: 1. Heat the olive oil in a frying pan over medium heat. 2. Cook the red onion and bell pepper for 4–5 minutes. Stir in the taco seasoning and tomato paste, then add the black beans, corn and water. 3.
