However, cast iron can rust when exposed to moisture for an extended time, like when you slow cook chili or roast meat. If you’ve been struggling with your cast iron lid, follow these three simple tips to prevent rust while cooking. 1. Before cooking, spray your lid with a light coat of cooking oil and rub it in with a paper towel or cloth. 2. While cooking, periodically remove the lid and wipe away excess condensation. 3. After cooking, clean your pan and lid with soap and water, dry with a towel, wipe a thin layer of cooking oil over the surface, and store in a dry place with the lid off.

It’s our October Recipe of the Month, Beef Chili! Ingredients- 2 tablespoons olive oil 2 pounds ground beef (lean) 1 large yellow onion, diced 2 red bell peppers, diced 6 cloves garlic, minced 1 teaspoon salt 3 tablespoons chili powder 1 tablespoon cumin 2 teaspoons smoked paprika 1 teaspoon oregano 1 teaspoon coriander ½ teaspoon cayenne pepper (optional) 1 tablespoon Worcestershire sauce 1 can crushed tomatoes (28 ounce) 1 can fire roasted tomatoes (14 ounce) 2 cups beef broth 1 tablespoon apple cider vinegar 2 cans kidney beans, drained and rinsed (15 ounce) 1 can pinto beans, drained and rinsed Directions- Heat dutch oven with 2 tablespoons olive oil over medium heat for 3 to 4 minutes. Add ground beef and 1 teaspoon of salt. Brown for 2-3 minutes before stirring. Using a wooden spoon, break up the beef and cook until uniformly browned. Transfer to a bowl. Add onion and bell pepper to the dutch oven. Cook for 5 to 7 minutes until soft and lightly browned. Stir in the garlic. Lower the heat to medium low, add chili powder, cumin, smoked paprika, oregano, coriander, and cayenne. Stir until fragrant, about 1 minute. Add chopped sun-dried tomato plus 1 tablespoon of their oil. Cook for 1 to 2 minutes. Return the beef to the dutch oven and add the canned tomatoes, broth, and Worcestershire. Stir well, scraping the bottom of the pot to remove cooked on bits. Bring to a simmer, reduce to low, and cover with the lid slightly ajar. Cook for about 45 minutes, stirring infrequently. Stir in apple cider vinegar. Taste and adjust seasonings. Add beans and cook for 15 minutes more. If the chili feels too thick, stir in a little more beef broth. If it’s too loose, simmer uncovered until it has reached its desired consistency. Serve with your favorite toppings.

FALL BACK ep.5 🍁Pumpkin Sourdough🍁 cozy, warm recipes for you to fall back on this autumn🍂 and this episode features the new @lodgecastiron Bread Oven, specifically designed for bread bakers and now available 🥰 I’m curious… what’s your Lodge story?! I started out baking sourdough in the Lodge Dutch Ovens (actually, I started my microbakery with just 2 of them!). 💫RECIPE 100g active sourdough starter 220g warm water 184g pumpkin puree 50g brown sugar 1tsp pumpkin spice 1tsp vanilla extract 500g bread flour 10g salt 1 cinnamon stick (for decorating after baking) 🍞 Mix together all the ingredients until there are no dry bits. Cover with a damp cloth and rest for 30 mins. 🍞 Perform 3 sets of stretch and folds, 30 mins apart. (A stretch and fold is when you wet your hand, grab one side of the dough, stretch it up and fold it over itself - rotate the bowl and repeat from all four sides). 🍞 Cover and bulk ferment for 6 hrs or until doubled in size. 🍞 Shape gently into a round on a lightly floured surface. Place seam-side up in a banneton or bowl lined with a floured tea towel. Place in fridge overnight or up to 2 days. 🍞 When ready to bake, Preheat your Lodge Bread Oven to 430°F for at least 30mins. Turn dough seam-side down onto parchment. Lay 4 pieces of kitchen twine in a criss-cross pattern underneath. Dust dough with flour and spread gently. Tie the strings in pairs from opposite sides to create 8 even sections for that pumpkin shape. Score each section with wheat stalks (as shown in video). Cut off any excess string just above where it’s tied. 🍞 Place 2 ice cubes under the parchment, then transfer into the hot oven with the lid on. Bake 20 mins lid on, then 25 mins lid off until deep golden. Let cool completely before removing the string, and placing a cinnamon stick in the middle to decorate as your pumpkin stem :) FOR SERVING 🥰 make my cinnamon honey butter to go with it! Beat together ½ cup salted butter (softened), ¼ cup honey, ¼ cup powdered sugar, 3 tsp cinnamon, and a pinch of salt until incorporated. slather it on warm bread and thank me later 😗Happy Baking! #LodgePart

We saw @Gabriella make peach ring pancakes and had to try it for ourselves. We covered a few medium firm peach slices in Chef Kris's favorite pancake batter (recipe below!) Ingredients- 1 1/2 cups all-purpose flour 2 teaspoons baking powder 2 tablespoons white sugar 1 cup buttermilk 2 tablespoons whole milk 1 egg, beaten 2 tablespoons unsalted butter, melted 1/4 teaspoon vanilla extract 2 tablespoons butter, for griddling Directions- Whisk together flour, baking powder, salt and sugar. Fold in wet ingredients, but do not over mix (batter should be lumpy) Heat cookware over medium low heat for 5 minutes Add a little butter to the hot cooking surface. Coat a peach ring in the batter (Toothpicks will help with this process) and then cook for 2-3 minutes per side. Repeat with remaining batter. Top with homemade whipped cream and enjoy!

We often hear people say "I don't like cast iron because it takes too long to clean" but that couldn't be further from the truth! Most meals can be cleaned up in as little as 30-60 seconds. Always wanted to impress with a flambé but not feeling confident in your pyrotechnic skills? According to Chef Kris, this is everything you need to know: Start by heating your booze in a separate heat-proof container to get it warm. Yes, a little booze is required for this technique. Never pour from the bottle (please!). Always pour away from yourself (please!). Turn off the heat completely before you add any alcohol to the pan, and always have a lid handy in case things get real. Use a wand lighter and come at it low. Don't stick your hand in the middle of the cookware, silly. Be confident in your actions. Know there's going to be a flame. With the heat off, it'll dissipate fairly quickly. Double-check that all the alcohol has burned off. Sometimes it's hard to see that your delicacy is still on fire. That's it! Easy, right? 🔥🍳
