big cinnamon energy 🥧 Crust Ingredients 4 C (480g) all-purpose flour 1/2 C (99g) sugar 1 tsp salt 20 Tbsp (283g) cold cubed butter 1 large room temp egg + 1 yolk 3 Tbsp (43g) milk 2 tsp vanilla 🥣 Filling 1 1/2 C (320g) brown sugar 4 Tbsp (57g) melted butter 1/4 C (30g) all-purpose flour 2 Tbsp cinnamon 2 tsp vanilla 1/2 tsp salt 1 large egg white, mixed with 1 tsp water 🍦 Icing 1 C (113g) powdered sugar 1 Tbsp (14g) milk 1 Tbsp (13g) brown sugar 2 tsp vanilla 1/4 tsp cinnamon pinch of salt 🧑🍳 Crust 1• Combine dry ingredients in a mixer. Add butter and mix on low until it's nearly sandy. 2• Whisk the wet ingredients, then drizzle in on low until large clumps form. 3• Split the dough in half (~490g each). Shape each piece into 5" x 7" rectangles. Wrap tightly and refrigerate at least 20 min. 🧑🍳 Filling 4• Mix all ingredients except the egg white in the mixer on low until it’s uniform in color and like wet sand. 🧑🍳 Assembly 5• Line a sheet pan with parchment and flour your work surface. One at a time, roll 11" x 13" rectangles 1/8" thick with chilled dough. Use trimmings to patch cracks. 6• Use a rolling pin to move the dough to a pan and refrigerate. Repeat with other piece. 7• Brush a 1" border of the egg white mix on all edges of one chilled dough. 8• Evenly press in the filling, avoiding the egg washed edge. 9• Place the second piece of dough on the filling and seal the edges with a fork. Refrigerate the assembled pop tart for 30 min. Preheat the oven to 350°F with a rack in the center. 10• Poke the top two dozen times with a fork. 11• Bake for 30 to 35 mins, or until the edges are light golden brown; the surface may be slightly shiny and/or puffy. Let it cool for 5 mins before icing. 🧑🍳 Icing 12• Mix all icing ingredients in the mixer on low speed until smooth. Spread the icing evenly over the top of the giant pop tart, leaving a 1" border on all edges. Let it set for 15 minutes before slicing.
